As spring blooms in Dubai, Jou Jou Brasserie at Four Seasons Resort Dubai at Jumeirah Beach debuts a Mediterranean-inspired seasonal menu from Head Chef Gioia Baek.
Infused with personal memories and coastal nostalgia, each dish reflects a story, moment, or place from Gioia’s culinary journey. “I wanted the menu to feel like a summer memory,” she says—evoking sunlight, sea breeze, and long, leisurely meals.
The Taste of Jou Jou board sets the tone for sharing, with Mediterranean staples like vitello tonnato, creamy burrata, artichoke salad, croquetas, gambas, and Nocellara olives.


Cold starters include Bluefin Tuna Tartare with tarragon vinaigrette, and a citrusy Niçoise Salad “like sunshine on a plate.” Gioia’s dairy-free Croquetas nod to Córdoba, with cod and black lemon mayo evoking the city’s orange blossom scent.
Warm dishes bring richness and depth. Omani white prawns in house-made lobster butter and crispy Italian crusco peppers lead the way, followed by Grilled Octopus over mashed potatoes.


The Jou Jou Seafood Soup is a soulful blend of bouillabaisse, cacciucco, and cataplana, brimming with sea bass, scallops, prawns, and sweet Datterino tomatoes.
Pasta dishes are rooted in memory: Pear and Ricotta Plin with Parmigiano cream and lime zest channels Tuscany, while Mezze Maniche al Pomodoro uses sweet Sardinian tomatoes topped with stracciatella for contrast—“a love letter to Italy,” Gioia says.


Mains highlight honest coastal cooking, like Sea Bream Provençale with mussel jus, Veal Milanese with fries and rucola, and Roasted Yellow Chicken that embodies Mediterranean simplicity and comfort.
Pastry Chef Nicolas Lambert adds refined dessert flair, with standout treats like Caramelised Flan with berry compote, Apple Tarte Tatin with Tahitian vanilla, and a classic Tiramisu rich with coffee-soaked Savoiardi.
Whether dining on the terrace or under the stars, Jou Jou invites guests to slow down and savour the Mediterranean lifestyle. “It’s not just a cuisine—it’s a way of living,” Gioia says.
