Marriott International’s Luxury Group has released its The Future of Food 2025 report, which highlights the Asia Pacific region’s growing influence on global culinary and dining trends.
Drawing insights from over 30 top chefs, mixologists, and industry experts, the report outlines 10 key trends reshaping the food and beverage landscape, positioning Asia Pacific as a driving force in the global gastronomy scene.

Asia Pacific has become a culinary tourism hub, commanding 37.8% of the global market in 2023 and projected to grow to USD 6.2 trillion by 2033. The region’s blend of tradition and innovation has made it a magnet for food enthusiasts, with Asia’s culinary styles increasingly influencing global dining trends.
As Oriol Montal, Managing Director of Luxury for Asia Pacific (excluding China), notes, dining plays a critical role in shaping travel decisions, and Marriott is committed to offering guests immersive dining experiences that showcase the region’s rich culinary heritage.

- From Asia Pacific to the World: Asia Pacific’s culinary influence is expanding, with chefs fusing local flavors and techniques into global cuisine. Japanese, Korean, Indian, and Chinese ingredients are reshaping Western dining norms, with diaspora chefs revitalizing native culinary traditions.
- Revival of Forgotten Ingredients and Traditions: Chefs are preserving and innovating within ancient culinary practices, such as nose-to-tail cooking and artisanal techniques, contributing to cultural heritage and global sustainability efforts.
- Fine Dining Redefined: Hyperlocal dining and superfine experiences are emerging, with restaurants elevating lesser-known regional cuisines and offering exclusive, membership-based access. There’s also a shift towards more intimate, relaxed, and high-quality dining experiences.
