Focusing on the rich traditions of Jiangsu and Zhejiang cuisine, the menu highlights local ingredients from Hangzhou’s West Lake, Shaoxing, Suzhou, Wenzhou, and beyond, blending regional flavors with innovative touches.

With a focus on seasonality, the banquet’s ten dishes reflect the transition from summer to autumn, using fresh ingredients such as watershield from West Lake, Shaoxing’s aged rice dregs, and Xiaoshan’s white radishes.
