Jonathan aims to showcase Kyoto’s unique dining venues, from the heritage pond garden to a fire grill using cherry wood charcoal. Under his leadership, the outdoor terrace has been refurbished into a cosy, all-day retreat.

Originally from France’s Basque region, his passion for hospitality began unexpectedly while studying landscape architecture.

His career took him from luxury hotels in Paris and Tokyo to leading successful restaurant revamps in Bali and Tokyo’s Four Seasons Hotel Otemachi, where he helped launch Michelin-starred est.

Now in Kyoto, Jonathan brings Michelin-level expertise and a love for Japan’s culinary heritage, promising exciting, seasonal dining experiences. “There’s a special energy here,” he says. “I’m excited to create unforgettable moments for our guests.”
