Four Seasons Hotel Firenze debuts Onde, a coastal Tuscan-inspired restaurant, and unveils the newly renovated Palazzo Del Nero, blending Renaissance charm with contemporary luxury.

This fall, Four Seasons Hotel Firenze is unveiling exciting additions, including the launch of Onde restaurant on October 3, 2024, set within the newly renovated Palazzo Del Nero.

Onde brings a fresh take on Florence’s dining scene, blending coastal Tuscan flavors with a stylish, vibrant atmosphere. Executive Chef Paolo Lavezzini, inspired by his roots in Tuscany’s Versilia region, collaborated with a talented team to create a contemporary fish osteria with a glamorous twist, featuring seafood classics like raw fish, fried paranza, and “spaghetto con le arselle,” all meant to be shared. To enhance the experience, a DJ set plays every night, adding to the restaurant’s lively charm.

Adjacent to Onde is Bar Berni, a vermouth bar with all-day dining inspired by the Tuscan archipelago, led by Bar Manager Antonello Palermo. With its botanical decor and views of the Italian-style garden, Bar Berni offers cocktails that complement Onde’s Mediterranean theme.

Both venues are located in Palazzo Del Nero, a 16th-century building offering 36 luxury rooms and suites.

This historic structure, once home to the Del Nero family, has been redesigned by Pierre-Yves Rochon, preserving its Renaissance charm while introducing modern touches. The Presidential Suite, with its 19th-century ceilings and frescoes, reflects this blend of history and innovation, providing an elevated guest experience.
