Celebrating Balinese Wine Excellence
Sundara at Four Seasons Resort Jimbaran Bay impressed the 2024 Wine Spectator judges with a 250-label wine list, a notable onsite cellar, and a journey through some of the world’s most renowned wine-producing regions. The spotlight also shines on Balinese wines, such as the Isola Rosso Raw, made from syrah and malvasia nera grapes cultivated on the northern Buleleng coast.
Similarly, Ayung Terrace at Four Seasons Resort Sayan was celebrated for its culturally rich dining and drinking experience, highlighting Bali’s emerging wine culture alongside sophisticated modern Indonesian cuisine. Curated by Balinese Beverage Manager I Made Adi Wirawan, the wine list at Ayung Terrace features Bali’s distinctive Cuvee Sababay, produced from chardonnay grapes in Kintamani’s high-altitude region. The list also includes global premium selections like Sassicaia and William Fèvre’s Grand Cru Chablis, served with precision using the Coravin system.
New Culinary Experiences
These prestigious awards coincide with Sundara’s recent design refresh, which mirrors the expansive ocean horizon through a playful, linear aesthetic. This summer, Sundara introduces the Love at the Beach Sunday Brunch, a culinary celebration that blends haute cuisine with Jimbaran BBQ flavors, crafted by Chef de Cuisine David Gavin.
The brunch menu features mouthwatering dishes such as barbecued octopus, grilled prawns, and wagyu flank steak, complemented by refreshing seafood platters and a coconut crab salad. This summer, the acclaimed TELU bar at Four Seasons Jimbaran Bay continues to push the boundaries of modern mixology with two new creations made entirely from ingredients grown on-site and local spirits. These innovative cocktails are the vision of Bar Manager Jan Jurecka.
The pandan-inspired Kolak Pisang combines pandan, Indonesian Nusa Cana Tropica Rum, coconut, and banana peel, while the Ocean Guardian blends blue spirulina algae, house-made Kaliandra mead, lemon, and local Palwana arak. Proceeds from these zero-waste cocktails support coral reef restoration efforts by the local community charity, Ocean Gardener.
At Four Seasons Resort Sayan, Mixology Masterclasses at Sokasi offer a farm-to-glass drinking experience in an earth-conscious manner. Overlooking a vibrant landscape of rainforest, paddy fields, and vegetable gardens, these masterclasses reveal the secrets behind the bar’s signature cocktails, crafted from homegrown fruits, botanicals, and herbs sourced from the resort’s gardens and local producers. The spirits are aged in indigenous teak barrels and terracotta casks made by local artisans, creating a deep connection between the drinks and their origins.
