On May 13, 2025, Chef Dani García brings the ancient ronqueo ritual—traditional bluefin tuna carving—to the terrace of Dani Brasserie at Four Seasons Hotel Madrid.
The Tuna, Caviar and Sherry event blends Andalusian tradition with high-end gastronomy, featuring almadraba tuna, Ossetra caviar, and premium sherries.
The night starts at 6:00 pm with a terrace reception and tuna-inspired bites like o-toro nigiri, morrillo brioche, and mojama gilda.

At 7:00 pm, guests will witness the live tuna carving ritual, followed by a curated dinner at 8:30 pm highlighting dishes like Tomate Nitro, glazed parpatana, and tenderloin with matelote sauce, ending with a chocolate and mandarin dessert. DJ Bluesbel provides live music.
