Christmas Eve Menu:
The evening begins with an exquisite mollusc dish featuring Galician clams, abalone with sake, sea snail au natural, and oysters with Ossetra caviar beurre blanc. This is followed by foie gras millefeuille with goat’s cheese and caramelized green apple and a lobster consommé with imperial caviar. For mains, guests will enjoy sole Wellington with truffle and roasted Challans duck à l’orange with crêpes. Desserts include a confit lemon mousse cake and a molten hazelnut cake with vanilla ice cream.

New Year’s Eve Menu:
The celebration starts with the signature mollusc dish and Tomate Nitro, a refreshed classic with smoked eel and herring eggs. Highlights include Ossetra Imperial with asparagus, roasted lobster on a vol-au-vent with American sauce, and pheasant stuffed with plums and foie gras sauce. Desserts include basil flan with almond crumble and smoky chocolates with whisky and coffee butter ice cream. Guests will toast to the New Year with the traditional 12 grapes and a lively party.
