Known for his artistry at est, the Hotel’s Michelin-starred French restaurant, Chef Michele infuses the experience with the sophistication of French patisseries, incorporating the latest Parisian dessert trends.

Launching December 26, 2024, the revamped offering begins with the Winter Strawberry Afternoon Tea, a celebration of Japan’s seasonal strawberries and the fragrant fraises des bois from France.
This three-tiered presentation, as much a visual masterpiece as a culinary one, features sweet highlights like the Strawberry, Lemon and Honey Charlotte—a nostalgic nod to French picnics—and the Strawberry and Rhubarb Confiture, Yogurt Mousse, shaped like a radiant strawberry. Savory creations by Executive Sous Chef Kensuke Kuze, including Scallop Mousse with Truffle Pie, bring a refined French flair to the menu.
