In December 2024, Four Seasons Resort Hualalai will reveal a reimagined Ulu Restaurant, featuring a fresh menu and decor that elevate local Hawaiian ingredients and pan-Asian culinary techniques, led by Executive Chef Richard Polhemus.
Alongside, the resort introduces Noio, a new omakase-focused sushi lounge on the second floor, offering nightly menus crafted by Sushi Chef Nuri Piccio. This expanded dining experience highlights local flavors and views, marking a significant enhancement to the resort’s culinary offerings.
Ulu Restaurant, known for its commitment to local produce, sources 75% of ingredients from Hawaii Island’s farms, reinforcing its hyper-local approach. Executive Chef Polhemus has created a diverse menu with Hawaiian and Asian influences, including standout dishes like Hualālai Oysters with house-made hot sauce, Kanpachi Crudo with jalapeno ponzu, and Ahi tuna Wellington with Ali’i mushrooms.
Its wine program, holding Wine Spectator’s Award of Excellence, further complements the island-inspired menu. The restaurant’s redesign includes modern furnishings and outdoor seating, embracing the oceanfront scenery and sunset views from its central bar and patio.
Opening in early 2025, Noio’s omakase dining experience brings an authentic touch with fresh local and Japanese seafood, offering a seven-course journey crafted by Chef Piccio. Named after a Hawaiian bird symbolizing discovery, Noio guides guests through a culinary exploration featuring specialties like Dobin Mushi, Wagashi confections, and a bi-weekly chef’s selection of rare game. With striking red and soft grey accents, Noio immerses diners in Hawaii’s oceanic ambiance.
In addition to Ulu and Noio, the resort offers other dining venues: Miller & Lux Hualalai, a Hawaiian outpost of Tyler Florence’s San Francisco steakhouse; Beach Tree Restaurant, blending coastal Italian and Hawaiian flavors; the exclusive Resident’s Beach House; and the Hualalai Trading Company, a gourmet grab-and-go market. While Ulu Restaurant will be exclusive to resort guests in December 2024, both Ulu and Noio will open to the public in January 2025.
