To celebrate the festive season, Pastry Chef Michaël Bartocetti of Four Seasons Hotel George V, Paris has unveiled an exquisite Yule Log that is both a visual and culinary masterpiece.

Shaped like a holly leaf, this stunning creation reflects the chef’s signature style with smooth, flowing curves adorned with chocolate pearls.

Infused with pear and chocolate, the Yule Log offers a luxurious balance of flavors. At its core is a rich chocolate mousse with caramelized undertones, combining milk and dark chocolate for a layered, complex taste. The addition of bergamot adds a subtle citrus hint, elevating the experience.

The top is adorned with crispy puffed rice, tapioca milk, and Williams pear, creating a delightful crunch, while a touch of sea salt adds savory depth. A delicate biscuit brings softness, contrasted by the light, crisp textures of puffed rice and tapioca.
