Crafted by Executive Pastry Chef Andrea Bonaffini, the menu showcases local ingredients and citrus fruits, offering a unique blend of traditional and modern Thai flavors.

Guests are welcomed with a sparkling drink and a torch ginger sorbet amuse-bouche with Samut Songkhram coconut sugar.
The savory course features delicate creations such as salmon with beetroot orange cream, flan de elote with Hokkaido corn, smoked duck foie gras with apricot-cherry compote, and prawns with tomatillo emulsion and Oscietra caviar. A surprise dish of Shirasu with passion fruit cream adds another layer of intrigue.
For dessert, guests can savor grapefruit-jasmine, yuzu with sesame and pomelo, kumquat with vanilla and pistachio, and a verbena raspberry tart, followed by lemon sorbet soft-serve ice cream. The afternoon tea is complemented by fine teas or coffee.
