Nobu, the globally acclaimed Japanese restaurant founded by Chef Nobu Matsuhisa, has officially opened at two of the most iconic resorts in the U.S.—Grand Wailea, a Waldorf Astoria Resort in Maui, and Hotel del Coronado in California—offering guests a luxury dining experience that fuses signature dishes with local flavors.
The openings follow extensive renovations at both resorts and mark a new era in their culinary journeys. At Grand Wailea, the $350 million revamp sets the stage for the 13,000-square-foot Nobu Grand Wailea Maui.

Guests can enjoy Chef Nobu’s famed Japanese cuisine with South American influence, alongside Maui-inspired creations like local line-caught fish with black bean sauce and a Kona Coffee Tres Leches Cake.
Designed by Rockwell Group, the restaurant features an expansive indoor-outdoor layout with a sushi bar, private dining rooms, and lush open-air seating.
Meanwhile, Nobu Del Coronado brings a refined coastal experience to the historic Hotel del Coronado.

With 156 seats, including 120 outdoors, the 3,700-square-foot venue features a sushi bar and Pagoda Bar offering sake, Japanese whiskeys, and craft cocktails. Menu highlights include Lobster Truffle Tempura and Tai Sweet Shiso.
